Dharwad pedha was prepared basically from the milk of Dharwadi buffaloes which are the animals raised by Gavali community in and around dharwad. Dharwad is located in North Karnataka on the way to Pune/Mumbai highway. When you cross towards Dharwad, you can notice lot of highway shops specifically opened to sell Pedas. Along with pedha, they also sell Mixture and other snacks.

How to prepare Dharwad Peda?
Ingredients: Milk, Sugar, Pure cow ghee, Cardamom powder

Steps to prepare Dharwad Peda
1. Boil milk (full fat milk) fully and then turn into low flame.
2. Keep adding one tablespoon of lime juice until the milk solidifies and greenish water will be left aside.
3. After the milk solidifies, filter it using cloth. This is nothing but paneer.
4. Take the paneer and start frying in a pan, adding little ghee as necessary.
5. With a spoon, press the paneer until it becomes small grains. After this process is done in 10-15 mins in low flame, remove it.
6. Add half a cup milk and eight tablespoons sugar. Make it into a paste and transfer it to the frying pan.
7. Start cooking on medium heat very very patiently with nonstop stirring. Keep adding little milk if you see it is dry.
8. When it becomes brown and granular, remove this peda mixture from pan. It takes sometime as long as 1.5 hours to reach this consistency.
9. Add cardamom powder to this mixture and let it cool down.
10. Once it is cools to normal temperature, mix it in grinder. If it is dry to make it into round pedas, add 2-3 tablespoon of milk and mix.
11. Once done, roll into uneven oval shaped pedha, garnish it with little sugar.

Your Dharwad Pedha is ready to be served. It may last for a week if kept in air tight containers.
